Shama Joshi came to the food business from a different route than most: she spent years at Microsoft in the tech industry before opening her successful Indian food truck. That truck: Roll Ok Please and its kathi rolls and fresh paneer was loved by everyone, including Anthony Bourdain.

She is now a passionate teacher, bringing her knowledge of regional Indian cuisine to many. Shama loves demystifying Indian culinary techniques, and showcasing the incredible diversity of dishes and flavors found in Indian cooking. Shama is an utter delight to be around, and her class is sure to be a thrill to attend.

For this fall class, Shama has created a modern Indian menu. She will be teaching us how to make a butter chicken pot pie and a vegetarian butter paneer pot pie. These will be a combination of the traditional Indian butter chicken and butter paneer with a modern western preparation of the puff pastry covered pot pie. Shama wants to make Indian cuisine accessible and work with our contemporary schedules.

The menu will also include a daal soup made with lentils simmered with spices and herbs. And to finish the meal an arugula ginger salad.
